Book on Western Azerbaijani cuisine presented in Ganja

A book "Sweet Pearls of Western Azerbaijan" has been presented at Ganja branch of the Azerbaijan National Academy of Sciences (ANAS), Azernews reports.

The book was published by Azerbaijan Culinary Specialists Association in the framework of the grant project of the Agency for State Support to NGOs.

The authors of the book are the President of Azerbaijan Culinary Specialists Association and the World Union of Turkic Culinary Culture, Science and Art under TURKSOY, Honored Cultural Worker Tahir Amiraslanov and Aynura Amiraslanova.

The author of the preface is the Executive Director of the Agency for State Support to NGOs of the Republic of Azerbaijan Aygun Aliyeva. The book is published in Azerbaijani and English languages ??and has 220 pages.

Speaking at the event, chairman of the ANAS Ganja branch, Academician Fuad Aliyev, scientists, representatives of the intelligentsia and the public stressed the importance of implementing the project in promoting national culinary culture, history and heritage, bringing the wealth of the Azerbaijani people to the world community.

The book provides extensive information on the history of cuisine and sweets of Western Azerbaijan, describes the rules for preparing more than a hundred confectionery products with illustrations.

The publication also covers the restoration and historical and ethnographic study of recipes for traditional sweets that have been formed for centuries in the territory of Western Azerbaijan, the Irevan Khanate and were borrowed by Armenians.

The book touches on a wide range of issues in cooking - from flour and confectionery to dried fruits, jam, candies and drinks, and describes in detail various sweets.

Moreover, for the first time, restored traditional formulas for the preparation of sweets related to the cuisine of Western Azerbaijan are presented, including sujug, alana, Iravan kata, goychey badambura, jilov, etc.

A list of literature from 58 units and information on 63 respondents who provided information on this area are indicated are indicated at the end of the book.
